Bia
Bia is an Italian couscous maker from Argenta near Ferrara and one of the largest couscous producers in Europe. From Bia we stock durum wheat couscous in 1 kg and 5 kg packs.
BIA was founded in 2004 by taking over couscous production from the Bacchini pasta factory in nearby Lavezzola, the first to make couscous in Italy. Since 2005 it has produced in Argenta in Emilia-Romagna; today it has three plants, one of them solely for gluten-free products, and exports to more than 50 countries. Besides classic couscous, it also makes wholegrain, organic and gluten-free couscous from pulses and other grains.
What we stock
We sell durum wheat couscous in a 1 kg pack for home use and a 5 kg pack for heavy use or catering.
According to the producer, it takes about 5 minutes to prepare: allow about 50 g of couscous per serving, pour over the same volume of hot but not boiling water or stock, cover and leave to swell. Then season with salt, add a spoonful of olive oil and fluff up with a fork. Couscous goes well with braised meat and vegetables, in tabbouleh salad or as a side dish instead of rice.
