Foison (Chinese 大丰收, "great harvest") is a Chinese brand of dried mushrooms, noodles and other dry goods from Fujian province. From Foison we stock dried shiitake mushrooms in 100 g packs.
Foison products are supplied by Foison (Fujian) Industry and Trade from south-eastern China. The brand covers dried mushrooms, rice noodles, wood ear mushrooms and other dry goods – in Europe you will find them in Asian food shops from Britain and Spain to Poland.
What we stock
Dried shiitake mushrooms (100 g) have a strong mushroom aroma and umami taste. Soak them in cold water for several hours or overnight in the fridge; in hot water they soften faster but lose some of their flavour. Then cut off the tough stems and always cook the mushrooms.
Strain the soaking water and use it as stock for miso soup or noodles. Shiitake are good in soups, braised dishes, fried rice, filled dumplings and with stir-fried vegetables. Store unopened packs in a dry place.
