Hengshun is a Chinese vinegar maker from Zhenjiang with a history going back to 1840 and today a major vinegar producer in China. From Hengshun we stock 250 ml rice vinegar for sushi.
The company's history begins in 1840, when Zhu Zhaohuai founded the Zhu Hengshun rice wine distillery in Zhenjiang, Jiangsu province. Around 1850 it created the forerunner of Zhenjiang aromatic vinegar, which is made from glutinous rice by layered solid-state fermentation in more than 40 steps. The process has been on China's list of intangible cultural heritage since 2006, and Zhenjiang vinegar has also held EU protected geographical indication status since 2012.
In 2001 today's Jiangsu Hengshun Vinegar-Industry became the first Chinese vinegar maker to be listed on the Shanghai stock exchange; it produces more than 300,000 tonnes of vinegar a year and holds the title of China Time-honoured Brand. It exports its vinegars to dozens of countries.

Rice vinegar for sushi (250 ml) is a mild vinegar for seasoning cooked sushi rice – mix it into the rice while still warm, with a little sugar and salt as directed on the bottle if you like. It is also good in salad dressings, pickles and sauces.
