Mizkan
Mizkan is a Japanese vinegar maker from the city of Handa that began making vinegar from sake lees for sushi in 1804. From Mizkan we stock seasoned sushi vinegar in a 568 ml glass bottle.
The company was founded in 1804 by Matazaemon Nakano, a sake brewer from Handa in Aichi Prefecture. After a trip to Edo, today's Tokyo, he began making vinegar from sake lees for the sushi sellers there and shipped it to them by boat. The name and emblem – three horizontal lines above a circle – come from the family crest: "mitsu" means three and "kan" means circle. According to the company, the lines now represent the taste, acidity and aroma of the vinegar, and the circle their harmony.
Mizkan is now one of the world's major vinegar producers. It also owns the British brands Sarson's and Branston and the American sauces Ragú and Bertolli, and in Handa it runs the MIM vinegar museum, opened in 2015.
What we stock
Sushi vinegar (568 ml, glass) is a ready-seasoned mix of vinegar made from rice and sake lees, sugar, salt and kombu seaweed extract. Mix it into still-warm cooked rice and leave to cool – it is then ready for sushi. It is also good in cucumber salads, pickles and dressings.
