Nokomis
Nokomis is a Canadian maple syrup packer and exporter from Trois-Pistoles in Quebec. From Nokomis we stock pure maple syrup in 1-litre packs in all four colour classes – from light Golden to Very Dark.
Nokomis was founded in 2005 by Vincent More, a Frenchman who moved to Quebec in 2000. It buys syrup from family producers in the Bas-Saint-Laurent region, bottles it and exports around 95% of its output to more than 30 countries. The name comes from an Indigenous legend in which Nokomis – a figure embodying the earth – was the first to collect maple sap.
How maple syrup is made
The sap of the sugar maple is collected in spring, roughly from March to April, and channelled to the sugar shack, where it is concentrated by evaporation. It takes about 40 litres of sap to make one litre of syrup.
What we stock
Canadian syrup is graded as Grade A by colour and taste: Golden (delicate taste), Amber (rich taste), Dark (robust taste) and Very Dark (strong taste). Lighter syrup suits pancakes, drop scones, yoghurt and tea; the darker, more intense grades are for baking, marinades, glazes for meat or roast vegetables.
