Brown rice vinegar from the Korean brand Chung Jung One is a rice vinegar with 6% acidity. It is produced in South Korea and, according to the label, is Korean rice vinegar. Its flavour is milder and rounder than that of sharp spirit vinegar, so it also works well in dishes where acidity should not dominate.
In the kitchen, you will use it to prepare sushi rice, in dressings for salads and Asian noodle salads, in marinades for meat, fish or tofu, and for pickling vegetables. In Korean cuisine, rice vinegar is also commonly added to dips and sauces, for example with fried dishes or in cold soups and noodles.
