Panko is a Japanese-style breadcrumb that differs from the European kind. It has a lighter, airier structure, so it forms a crispy, not overly heavy crust on fried dishes. This breadcrumb from the Thai brand Lobo is finely ground, so it works wherever coarser flakes don't stick well or would be too conspicuous.
You can use it wherever you would reach for ordinary breadcrumbs, including in Asian recipes:
- coating for chicken or pork schnitzel and katsu
- fried fish, shrimp and seafood
- vegetables in batter and croquettes
- cheese balls or nuggets
- an addition to meatballs, dumplings and stuffings
First coat the food in flour and beaten egg, then in breadcrumbs, and fry or bake until golden. The breadcrumbs contain wheat and are vegetarian. Store them in a dry place. The 1 kg pack is suitable for frequent cooking and for smaller businesses.
