Patak's Biryani is a spicy curry paste from Indian cuisine. It is based on ground spices (coriander, cinnamon, turmeric, cumin, paprika, black pepper and chilli) with ginger purée and garlic. The paste is thick and aromatic, so it is enough to serve as the seasoning for the whole dish.

Biryani is a layered dish of basmati rice, meat or vegetables. Coat the meat or vegetables with the paste and let it marinate for a while. Then combine it with onion, tomatoes and yoghurt and cook together with the rice. For the exact method and dosage, see the package.

Paste is also useful beyond biryani:

• for marinating chicken, lamb or fish before baking or grilling
• in curries made with pulses and vegetables, for example chickpeas or cauliflower
• as a seasoning for rice, couscous and similar side dishes
