Paldo Bibim Men is a Korean cold noodle dish that is served not in broth but with a thick, spicy sauce. The Paldo brand is well known in Korea for this type of noodle. The flavour is sweet and spicy: the sauce is based on chilli, soy sauce, garlic and vinegar, and sesame oil complements it.
The preparation is quick and suits hot days when you don't feel like eating warm food:
- cook the noodles for 3 minutes in 500 ml of boiling water,
- drain them and rinse with cold water,
- mix them with the spice blend and serve immediately.
You can eat them on their own as a light lunch. They also go well with fresh vegetables, hard-boiled eggs or kimchi. Allergy warning: the noodles contain wheat, the seasoning mix contains soy and sesame.
